A tale of two brownies.
Some days we may have more room to indulge, some days we need to watch macros a little more carefully, but every day we can have our cake and eat it too! Or in this case, brownies.
My wonderful client Sarah was kind enough to share some brownies with me last week while I was coaching and I had to get my hands on her recipe. Of course I then started to play with them to make them fit into my macros. There is nothing wrong with craving a little sweet at the end of the day; life is too short to always say no to ourselves. Very few foods could be categorized as good or bad, it’s all about the context. Trying to completely eliminate the food we love in order to be healthy is not a sustainable choice.
These recipes are both super easy, all you need is a big bowl and a hand mixer. You can mix wet ingredients first, then add dry, or you could just dump it all in and blend like I do! Can you tell I am not a baker?
Preheat oven to 350.
Line an 8×8 baking dish with parchment paper. Pick your recipe, mix all the ingredients in a bowl with a hand blender & voila!
Zucchini brownies:
1 ripe banana
1 cup of grated zucchini (about 100g)
1 tbsp peanut butter
4 tbsp PB2 (powdered peanut butter)
1/4 cup water
1/4 cup cocoa powder
1 scoop of your favourite chocolate protein powder
3/4 tsp baking powder
Bake 15-20 minutes or until set.
Macros for 6 brownies: 7P 8C 2F
Great with a little PB on top or some frozen yogourt. ☺️
Sweet Potatoes Brownies
200g of cooked mashed yams
1/2 cup unsweetened almond milk
1/2 cup of quick oats
4 tbsp cocoa powder
2 tbsp maple syrup
1 tbs coconut oil
2 tsp vanilla extract
1 tsp baking powder
1/4 tsp baking soda
Bake 20-25 minutes or until set.
Macros for 6 brownies: 2.2P 20.2C 3.4F
The maple syrup & coconut oil add great texture & taste to these!
